Divine Desserts by Emma
I am the pastry chef at the Godolphin Arms and have been since the re-launch, creating and developing desserts and cakes for our friendly customers.
I have been baking ever since becoming a mum 18 years ago, and the love I have for my family and friends comes out in my baking, especially the Brownie and Victoria Sponge because they have always been a favourite.
The key ingredient of "Emma's Brownie" is a good quality dark chocolate, this ensures that the middle is soft and gooey and it has a strong vibrant taste like a good brownie should have. To bake a successful Victoria Sponge where the cake is light and moist, it is essential to delicately mix your ingredients, and have a good quality strawberry jam for the filling (homemade preferably).
My enthusiasm for all things dessert comes from having a sweet tooth. When I am out and about I am always trying and looking for different ideas and flavour combinations. I take inspiration from menus, magazines and old recipe books to make different creations of my own.
I do think that making good desserts is about the love that you put into them, but also the passion in the way that they are presented. I have been told many times that the desserts are delicious and the best they've tasted - especially "Emma's Brownie".
I am looking forward to developing the dessert menu over the coming months, to give our customers a wider variety of taste and texture.

Currently Emma is serving up Sticky Toffee pudding, a divine Key Lime Pie, Victoria Sponge and of course, her famous Chocolate Brownie. Do come and visit us and try her delectable desserts – they are truly delicious served with a cappuccino or pot of tea. Although, it has been said that a glass of something sparkly is equally complimentary!
